Grasping on to their Balkan roots, renown Chef Vanja Puskar and New Balkan Cuisine will feature 8 courses that highlight a new form and experience beyond the imaginable.


This summer the New Balkan Cuisine team will be based in Budva, in hidden location at Dukley Gardens from August 5th until August 25th.

WHO IS VANJA PUSKAR?


Vanja Puskar is the founder and curator of New Balkan Cuisine, born 1986. in Prijedor, Bosnia and Herzegovina.


After finishing school, he begins his career in Belgrade.


Participated on the project “Modern Serbian Food” and is one of the Founders of the “Chefs Club Belgrade”.


His food philosophy is based on local ingredients and modern culinary techniques. Vanja supports and promotes local producers with which he shares the vision.


When you know the producers of your ingredients you are in the position to transfer the energy and love of them over the plate to the final customer.


2016. he started the project “New Balkan Cuisine”.


New Balkan Cuisine concept changes the food, the way it is perceived and it is consumed. The team want to adjust it to present time expectations and needs. Their knowledge and experience allow them to understand the core values. They respect the core values and modify food and culture accordingly by changing its form.


They are creating a completely new experience from already known flavors, which is the sole vision of New Balkan Cuisine concept.


They give a new meaning to traditional and seeks new flavors in those already discovered.


Through everyday work and by researching numerous localities of their terroir they realized that there is one more resource that deserves attention – Budva, Montenegro.


Every day there is something new to learn and discover, and that is one of the main reasons why they are in gastronomy – because it brings together curiosity and indulgence.
